Steamed banana (Matooke) with Fish

Ingredients

  • Sea bass
  • Banana (Matooke)
  • Different colour peppers
  • Shallots
  • Garlic
  • Coriander
  • Spinach

Cooking Time: 10 minutes

Preparation

  • Season the fish to taste by adding coriander, curry powder, salt, 2 tablespoon of Tabasco, 1 tablespoon of liquid seasoning, 2 tablespoon of olive oil and mix well
  • Place the spinach on a piece of aluminium foil and season with salt and olive oil. Ensure you mix well
  • Use the basting brush to evenly spread oil on the both sides of the cooking pan
  • Add the fish to one side of the pan and the bananas to the other side
  • Set your hob to maximum power
  • Add 200 ml of water to the bananas and cover the pan with a lid
  • When you see steam condensing on the glass lid and escaping, set the timer to 10 minutes and reduce the power to a third
  • After 5 minutes, turn the fish over
  • Add peppers and coriander leaves to the fish. Also turn the bananas over
  • Add some water to the bananas if needed
  • Fold the aluminium foil and place it over the bananas
  • Replace the lid and continue cooking
  • When the timer rings, mash the bananas
  • Serve and enjoy
