Steamed banana (Matooke) with Fish
Preparation
- Season the fish to taste by adding coriander, curry powder, salt, 2 tablespoon of Tabasco, 1 tablespoon of liquid seasoning, 2 tablespoon of olive oil and mix well
- Place the spinach on a piece of aluminium foil and season with salt and olive oil. Ensure you mix well
- Use the basting brush to evenly spread oil on the both sides of the cooking pan
- Add the fish to one side of the pan and the bananas to the other side
- Set your hob to maximum power
- Add 200 ml of water to the bananas and cover the pan with a lid
- When you see steam condensing on the glass lid and escaping, set the timer to 10 minutes and reduce the power to a third
- After 5 minutes, turn the fish over
- Add peppers and coriander leaves to the fish. Also turn the bananas over
- Add some water to the bananas if needed
- Fold the aluminium foil and place it over the bananas
- Replace the lid and continue cooking
- When the timer rings, mash the bananas
- Serve and enjoy
